Queenie's Mince Pie Recipe
Sure to put a spring in your step in the build up to Christmas, Darn has been treated with a special recipe by Cornish gal Queenie who has shared with us the best mince pie recipe, ever (!) equipped with her Darn tea towel, straight from her kitchen in Falmouth, Cornwall.
Gluten Free Mince Pies (makes around 12)
Ingredients:
125g unsalted butter, chilled and diced.
200g of gluten free flour (we used half doves gluten free flour and half buckwheat flour)
1tbsp icing sugar
Grated zest of one orange
200g mince meat
Method:
1. Rub the butter into the flour until it looks like breadcrumbs. Add the icing sugar and orange zest, spoon in 4bsp of water and mix with a knife until the dough comes together. Knead the dough lightly then gently squash into a flat disc. Put in the fridge for 30mins.
2. Heat the oven to 180c. On a lightly floured surface roll out the dough to 3mm thick. Using a 9/10cm round cutter, stamp out discs from the pastry. Refill any trimmings, keep stamping until the pastry is used up. Put the discs into a cupcake tin and fill with a mince meat.
3. Make little pastry shapes with cutters to put on top of the mincemeat so it’s pretty.
4. Wash the pastry with egg or milk and put them in the oven for around 20 minutes. Let cool, then enjoy!
